I made gumbo for the first time with 2 weeks worth of okra, and it was fantastic. 6 large pieces of okra, chopped into 1/2″ pieces, added up to exactly 2 cups, and it made excellent use of some other veggies we’ve been getting (onion, sweet pepper, parsley, tomato, scallion). Serve with plain white rice.
left out the chicken, and only 3/4 lb of sausage
lard in place of margarine
purple pepper in place of green
slightly less celery
vegetable stock in place of beef
2 fresh tomatoes in place of 1 small can
cooked the shrimp right in the stew, just for the last couple of minutes
